FOUR. BY AARON DALTON
FOUR. is a unique and personal fine dining experience, set in the purpose-built extension of chef-patron Aaron Dalton’s home.
We build our dishes around the finest seasonal ingredients, sourcing from predominantly local producers. Experimental in its nature, our food aims to deliver compelling flavours rooted in modern cooking technique.
Our menu draws on Aaron’s knowledge from his time working in a number of highly regarded London restaurants, including Michelin starred Chez Bruce and Fera, eventually culminating with his position as head chef at Smoking Goat, Soho.
A move back to his home county of Sussex in 2016 gave rise to the original FOUR. series of pop-ups, with Aaron and his wife Sally delivering a number of enormously well received events in Brighton and Hove.
Building upon this success, the couple looked towards the future with the hope of a more permanent restaurant setting as they welcomed their two children, Rex and Sylvie, into the family.
Cruelly, in December 2020, Sally was diagnosed with a rare bile duct cancer, and Aaron and the family’s focus was diverted solely to supporting her through treatment. Sally tragically lost her brave battle in December 2021.
Aaron’s determination to continue their joint aspirations in her honour gave rise to the idea of building the FOUR. dining experience at the family’s home in Worthing.
With his experience in carpentry, Aaron built himself a dining room and professional kitchen on the back of his and his children’s family home, allowing his passion for ambitious cooking to coexist with his unwavering dedication as a father to his two young children.
FOUR. strives to strike a balance with an intimate home-setting, serving just 20 covers per evening, while delivering the kind of creative, contemporary cooking you would expect from a top-level establishment.
